Simple Summer Suppers

This week I kept things pretty simple, which was what I needed after an eventful week.
Taco Stuffed Sweet Potato
A baked sweet potato is topped with ground beef seasoned with paprika, cumin, and a bit of oregano, along with lettuce and radish (from the community garden!), salsa, tomato, cilantro, and feta cheese. This was really easy to throw together and made for great leftovers.
One-Pan Street-Corn-Inspired Chicken and Rice
This was a fun recipe to make with minimal ingredients. Seasoned chicken breasts were seared, then rice, corn, and garlic were added to the pan before pouring in a can of coconut milk and some broth. At the end, I added the chicken back in along with chopped cilantro, feta, and a squeeze of lime juice. This turned out to be really tasty, but the rice ended up a bit mushy, probably because of the amount of liquid the recipe called for. I also wish it had been a little spicier, so I’ll make a note of that for next time. :)
Chicken Shawarma Bowls
Dinner tonight was a slop bowl of sorts. I marinated butterflied chicken breasts in goat yogurt, garlic powder, onion powder, and oregano, then grilled them and served them alongside couscous, a tomato-cucumber salad, tzatziki, and some lettuce to bulk up the bowl a bit more.
Chicken Sausages with Side Salad
Relying on a little convenience food this evening, we made chicken sausages with a side salad and some roasted sweet potatoes. Nothing too exciting here! I had mine with pepperoncini and yellow mustard.
A recurring snack this week was chocolate-covered strawberries (since it is officially strawberry season!), along with popcorn— but we eat that almost every night anyway.
